The truck is operated by a couple. Two people, one window, four days a week. There's nobody else to ask.
That's the model. The couple does the prep, runs the line, takes the orders, hands you the sandwich. The "always a line" Afrikka mentioned exists because two people are cooking with care, not because there's a third register and a backed-up POS.
Worth the wait. That's what everybody who's been there will tell you.
